So forget those dry, crumbly imposters. I have a moist, fluffy, flavour-packed bundle of joy in this easy vanilla cupcake recipe. It comes in the shape of a cupcake. I have tinkered and tweaked this recipe until I was happy with it. Small changes can make a real difference.
I made sure to leave a choice. You can have either a buttercream topping or cream-cheese icing. Both are very irresistible. Both toppings work really well and it is up to you to decide which is your favourite

Cupcake instructions

- Preset the Oven to 170 Degrees Celcius (340 Fahrenheit)
- Mix the plain flour, sugar, baking powder, bicarb and butter into a bowl and mix until you have a crumb like mix
- Add the Egg, milk and Vanilla into a separate bowl and mix together
- Once the Egg mix is ready slowly pour it into the flour mix, while mixing
- Continue until everything is well incorporated,
- You will have a very wet consistency
- If you would like to add in a few drops of food colouring do it now
- Pour into the cupcake cups, fill about 3/4 of the way. If you fill to the top as the cupcake rises is will spill over and not give you that great cupcake shape.
- Bake in the oven for 15 minutes or the cupcakes have a nice golden look. Use a thin skewer to test if the cupcake is ready.
ButterCream Icing Instructions

- Add all the buttercream ingredients into a bowl,
- Start mixing slowly since the icing sugar will go everywhere until starts to get mixed
- continue mixing until you have smooth textured icing
- If you would like to add in a few drops of food colouring do it now
- Apply either with 2 table spoons ( scoop with the first and use the second to slide the icing off the spoon onto the cupcake) or use a piping bag and go wild
Cream Cheese Icing Instructions

- Beat the butter and cream cheese together and mix until creamy consistency.
- Add vanilla essence and mix until well combined.
- Mixing slowly, gradually add the icing sugar until completely combined.
- If you would like to add in a few drops of food colouring do it now
- Apply either with 2 table spoons ( scoop with the first and use the second to slide the icing off the spoon onto the cupcake) or use a piping bag and go wild
